Mari Masak Chicken Tikka Masala


Olla ladies!


You've all got your Garam Masala, so, apa lagi, asapkan la dapur tu... Actually, dah lama nak try masak indian cuisine yang bukan kari mamak malaysian style. So, masa BBW hari tu rembat le seketul recipe book Mat Jamie ni, ada pulak simple indian cuisine recipes.  I've tested his recipe - CHICKEN TIKKA MASALA and adjusted the ingredients according to my taste. Simple je...sure korang boleh recreate this dish in your own kitchen.

Now, put on your aprons and jom masuk dapur.

 You'll need:
Half chicken - cut into small pieces.  Perap kejap dengan garam masala sikit.
2 onions (bawang besar) - finely sliced (nak tumbuk pun boleh gak.)
Thumb sized ginger (halia) - finely sliced (saiz jari korang tau...jangan le pulak pakai jari gergasi!).
2 fresh tomatoes - diced (Cik Yatt, jangan skip).
3 tablespoon tomato paste (boleh substitute ngan tomato sauce, but end product can be a bit sweet.)
200 ml (1 cup) plain yoghurt (substitute - milk + lemon/lime juice - it will become curdy).
1/3 cup coconut milk - optional (kalau pakai santan kotak, pakai 1/4 kotak kecik je).
A handfull of fresh cilantro / coriander (daun ketumbar) chopped - penting ni, jangan skip.
2 tablespoon garam masala, mix with some water to make paste.
2 red chilli - cut lenghtwise (optional).

How to:
Keluarkan belanga korang.
Tuang minyak dalam 1/4 cawan.
Tumis bawang, halia & kalau nak pedas lagi, masukkan dalam 1 tablespoon  of cili boh.
Bila dah wangi, masukkan garam masala and tumis sekejap. Jangan hangus plak.
Masukkan tomato paste, ayam & stir. 
Masukkan sedikit air & simmer.
Bila ayam dah half cooked, masukkan tomato &  cili potong.
Once ayam dah masak & tomato dah nak hancur, masukkan yogurt, santan & season with salt n sugar (depends on your taste, masala dish can be just tangy salty to slightly sweet)
Bila dah naik minyak, masukkan cilantro, stir & padam api.....taraaaa...siapppp!

Confirm sedap sehingga menjilat jari kalau makan ngan nasi, roti nan or even roti jala.

I like to serve with CUCUMBER SALAD - its just a mix of cucumber, plain yogurt, chilli & mint leaves, salt & sugar.

Note:
Kalau guna bawang tumbuk instead of sliced, kuah jadi lebih pekat. 
Boleh garnish with green peas or carrot for colour.

Garam masala ni is a very special blend of spice (cuba korang "study" bau/rasa dia).   Boleh guna untuk macam2 dishes cam Kurma, Rogan Josh, Palak Paner & banyak lagi.  Nanti kita explore ye.
